A popular day trip from London it to visit Windsor. It's really easy to get the direct train from Paddington to Windsor & Eton Central station in just under 30 mins.
You'll likely want to visit Windsor Castle, which is fantastic to look around. Do note it is closed to the public on Tuesday's and Wednesday's, so do avoid those days if you're going to visit Windsor Castle.
A great place for lunch, right next to Windsor Castle, is the 'Two Brewers Pub.' Lovely food, right next to the castle so you can enjoy a bite to eat and then take a walk along 'The Long Walk.' You could then head into Windsor town centre to look around the lovely shops or just have a wander. On the High Street opposite the castle, you will find lots of shops selling souvenirs, if this is something you might want to take home.
It is lovely to take a stroll into Eton, which is not far at all from Windsor (about a 10 min walk) to have a look at Eton School, which is an amazing building not dissimilar to Cambridge, and to have a cup of tea and cake perhaps. Eton is a lovely village and definitely worth visiting if you're in Windsor.
You can then take the train back to London when you're ready.
For those wanting to stay the night, The Castle Hotel is very good and I one that I recommend. For a special treat, you could take a horse drawn carriage with Windsor Carriages through Windsor Great Park. A wonderful experience and a family run business for generations. You can even have an afternoon tea aboard your carriage. A fabulous thing to do for something very special or a birthday or anniversary perhaps.
