Ishii Miso Brewery in Matsumoto is a hidden gem for miso lovers! Did you know that there are about 1000 miso producers in Japan - and 100 of them are in Nagano Prefecture? So you definitely need to try miso there! Established in 1868, this traditional brewery still crafts miso using a unique method that involves fermenting the paste for over three years. You can tour the brewery, indulge in a miso-infused lunch set, and even treat themselves to miso ice cream. The three-year-old miso here is aabsolutely delicious and something you can't really find anywhere else in Japan.
