Nagano is one of the most famous areas for soba noodles in Japan and Togakushi is said to be the birthplace. I'm not sure of how true that is but something I can say is that there's a good reason this restaurant is very popular with locals who travel far and wide to eat here. Saying that - make sure to come early or later in the day (definitely not lunchtime) if you don't want to line up too long!
The food is great, the staff are friendly and patient, and even though it's a busy place I never feel under pressure or rushed. On top of the food the location is just beautiful as it's in the national park and right next to Togakushi shrine.
Matt's tip: head to the Kagumi pond first and get photos with mountain reflections in the morning as early as possible before the wind picks up, move onto the shrine before the crowds (before 9am is optimal) and get back to this restaurant for 11AM.
