While in the old town of Rethymnon, make sure you stop by the phyllo workshop and bakery of legendary Yiorgos Hatziparashos, the 93-year old phyllo artisan.
He has been making phyllo almost on a daily basis since 1946. Just let that sink in. This man has travelled all around the world and picked up all kinds of influences and different ways to make the perfect phyllo.
You will probably see him making phyllo with his wife and son, especially if you visit in morning hours. Observe the way they do it. Ask him about his travels overseas, he will drop everything and open a very old photo album with pictures of him and his wife from past travels. And then you should try their baklava and bougatsa. Yum!
