ALBA Sourdough Pizza is one of our favorites in Zurich with artisanal, Neapolitan-style pizza. They use a 160-year-old sourdough starter and a mix of local and ancient grains for their dough. Their mozzarella is made from scratch using raw milk from nearby cows, and their tomatoes are hand-picked in Sicily.
They have super interesting flavor combinations. Two current faves:
"honey inferno* - brigade-passata / alba raw milk mozzarella / swiss nduja / hot honey / pimientos de padrón
"walk in the woods" - brigade-passata / caramelised onions / cavolo nero / cranberries / toasted almonds
They also have some amazing starters like the confit leeks and stracciatella with spicy salami jam.
