Molino el Pujol is a traditional tortilleria in Mexico City run by the famous chef Enrique Olvera. They're all about keeping it old school, making their tortillas from scratch using ancient techniques like nixtamalization. The result? Creamy, delicious tortillas that are a far cry from the mass-produced stuff you find at the grocery store. Plus, they're all about supporting small-scale Mexican corn farmers and preserving the rich culinary traditions of Mexico. It's basically a love letter to corn, one tortilla at a time.
