Albergo Ristorante Pasquino is a great place to sample the region's special flatbread called panigacci, which is made to order on a huge, wood-burning stove. It's a great place to go in the off-season when it's cold, because the heat of that stove creates a toasty atmosphere.

The hotel isn't fancy, but it isn't expensive either. The location is right in the heart of the city, with bars and gelaterie as well as the Museum of San Caprasio close by.

For a real treat, have the panigacci (which comes with cheese and cold cuts) and then have the steak, seared over the same roaring flames.
