Located on the south coast, this place is a year-round wonder nestled in the Kötlujökull glacier, part of the mighty Mýrdalsjökull glacier. Formed by melting water carving through the ice, this cave offers a unique peek into Iceland's volcanic history with ash from Katla eruptions dating back centuries. I'd always recommend this as a guided tour (see link) since it can be tricky to get there and glaciers can be sketchy due to their ever changing nature.
